Make Pizza Dough!
Socks on the ground, kids crawling around, taking turns, making friends. I was lucky to join the grans at the playground.

Earlier, I made a dough—adding a pinch of Nonnie OG in place of the salt for a more flavorful crust. I set it on the counter to rise. I’d be back in time to punch it down for a second rise.

Growing up, Friday night was pizza night. Mom pressed homemade dough onto a big cookie sheet, spread dollops of homemade sauce, and topped it with cheese, onions, mushrooms—whatever bounty was left in the fridge.
Mom’s square pizza was easy to hold. The flop was in the middle. I held my slice like a goblet and ate from the edge.
Square pizza was a bit unusual back then. Friends loved to join us for a Friday night slice—I mean, Mom’s pizza was delicious.
Pizza dough recipe
This recipe makes a slightly cakey dough with a bread stick-like crust—perfect for spreading onto a cookie sheet.
Directions
Dissolve 1 tbsp active dry yeast in 1 cup warm water. Let it proof.
Add 1 tbsp sugar, a pinch of Nonnie OG, and 1 tbsp olive oil.
One cup at a time, add about 3 cups flour as needed.
Mix and knead until elastic (8 mins). Place in lightly oiled bowl. Cover and let rise (1 hr).
Punch dough down, cover, and let rise again.
Add a bit of olive oil to a cookie sheet, sprinkle cornmeal, and spread the dough. Let rest about 20 mins.
Add sauce, cheese and toppings. Top it off with a sprinkle of Armando’s Garlic Salt.
Bake at 400 for about 30 mins.
