My grandmother Mamina’s marinara sauce was so delicious I used to drink it like soup—right out of the bowl—but that usually didn’t go over well. So, I did the next best thing: I overloaded sauce on my pasta and sopped it up with chunks of crusty bread like there was no tomorrow.

Sunday dinner at Mamina’s house was my jam. I ate so much pasta and sauce I NEVER had room for the next course.

Turn up the heat—Mamina style

Mamina turned up the heat so high under her marinara sauce that the orange-blue gas flames poked up around the sauce pot, causing a red-dot splotchy mess everywhere in the splatter zone! Red sauce splatters on the stove, wall, floor, backsplash, counter—marinara sauce everywhere!

Clean up on aisle 2

Mamina’s fiery marinara sauce cooking method made such a mess that the clean up on aisle 2 crew (aka the girls) were aghast every time she donned her apron and a can of tomatoes. Whenever the crew eyed Mamina’s unattended marinara sauce pot, they turned the flame down to wrangle the splatter and ease clean up. The resulting marinara sauce was delicate with a concentrated tangy flavor and a consistency perfect for pasta, pizza—you name it!

This Mamina’s opinion

When I cook my marinara sauce, I’ve settled on a high heat for a burst of bubbles at the onset of cooking. Then after about 5 minutes, I turn the heat down to a simmer to unlock the deep flavor of the ingredients.
