Turn up the heat- Mamina style

Mamina turned up the heat so high under her sauce that the orange-blue gas flames poked up around the sauce pot, causing a red-dot splotchy mess everywhere in the splatter zone!

Mamina’s fiery cooking method made such a mess that the “clean up on aisle 2 crew” (aka the girls) were aghast every time she donned her apron and a can of tomatoes.

Whenever the crew eyed Mamina’s unattended sauce pot, they turned the flame down to wrangle the splatter and ease clean up. The resulting sauce was delicate with a concentrated tangy flavor and a consistency perfect for pasta, pizza—you name it!

I’ve settled on a high heat for a burst of bubbles at the onset of cooking. Then I turn the heat down to a simmer to unlock the deep flavor of the ingredients.
